Renovated and reopened in February 2025, the interior features warm wood tones and soft indirect lighting, striking a perfect balance between sophistication and comfort. The subtle aroma drifting from the counter, the beautifully plated dishes brought before you — every detail conveys thoughtful craftsmanship and heartfelt hospitality.

Introducing the Vegan Course
to Highlight the
Natural Umami of Mushrooms
In our quest to explore the limitless possibilities of mushrooms, we created the Vegan Course — a healthy, creative, and satisfying dining experience that doesn’t rely on animal products.
Mushrooms are naturally rich in guanylic acid, an umami component said to be nearly three times more abundant than in shiitake mushrooms. Despite their deep flavor and aromatic richness, mushrooms are low in fat and packed with dietary fiber, vitamin D, and potassium — making them both nutritious and satisfying. Using these high-quality ingredients as our foundation, the Vegan Course incorporates techniques from various culinary traditions, offering a diverse and exciting flavor journey from start to finish.
Of course, mushrooms also pair exceptionally well with meat dishes. We see veganism as one of many options, which is why we continue to refine both our Special Course and Vegan Course to provide the best of both worlds.

Mushroom Tokyo’s dinner course menu changes every two months, featuring seasonal vegetables and herbs while capturing the unique flavors and aromas of each season through diverse cooking techniques.
Spring’s freshness, summer’s vibrancy, autumn’s depth, and winter’s warmth — every course reflects the natural rhythm of the seasons. In December, we also offer a special year-end course, turning an ordinary evening into something extraordinary.
From appetizers to desserts, each dish flows seamlessly while maintaining its own unique character. Among them, our signature “Hirahira Mushrooms” — paper-thin slices of fresh mushrooms — have been a favorite since our opening. Their light texture and delicate aroma create a memorable, one-of-a-kind tasting experience.

Beetroot Tartare 3.0
Layers of Flavor, Depth, and Harmony
The highlight of our Vegan Course is the “Smoked Mushroom & Beetroot Tartare ver. 3.0.” Brown mushrooms are lightly smoked, combined with walnuts and capers for texture and aroma, and delicately dressed with two types of infused oils. The dish is served with beets marinated in sherry vinegar and a soy-milk-based cream infused with lemon and garlic. By blending these elements on your plate, each bite reveals a new expression of flavor.
Smokiness, nutty richness, subtle acidity, and savory depth come together to create a truly layered and indulgent dish.

For guests who prefer not to drink alcohol, we also provide an equally thoughtful non-alcoholic pairing menu, featuring six original beverages crafted from tea, herbs, fruits, and spices.
